Yieldswere dramatically reduced in orderto increase the flavourconcentration in the remaininggrapes. Harvest was in lateSeptember and early October.The grapes for this wine came fromseparate vineyards that were pickedand fermented separately.During fermentation, the grape capwas pumped over several times aday to increase the depth of colourand levels of extraction of the winein the gentlest way possible. Before completing fermentation,the wine was pressed out, and thefree run wine was separated andused to make this wine.Malolactic fermentation was thenencouraged and when completedthe wine was racked into a mix ofnew and old Israeli oak barrels for24 months. Once the aging wascomplete each individual barrel wastasted for quality and only the winesof the very highest quality made itto the final blend.
