Aged exclusively in our Chai cellarusing 53 gallon, #2 char barrels, and a 105 entry proof, as with all ourspirits we do not chill filter this oering in order to leave as much of theflavor in tact as possible.Like all of our Bourbons, this oering is exclusively double pot distilledand uses both our self-propagated house yeasts as well as a uniquebrandy yeast. The mash bill is one we worked on to “balance” for quitesome time.
