Carmel Appellation Merlot is a dry red wine from Carmel Winery, Israel's founding winery (established 1882 in Zichron Ya'acov and Rishon LeZion). This Merlot is sourced from grapes grown in the Upper Galilee, fermented with extended skin contact, then aged in French oak barrels for over a year to build structure. Expect a deep purple color, aromas of cassis and violets with a bittersweet chocolate note, and a full-bodied palate that finishes long and balanced. Pour it alongside grilled lamb, braised short ribs, or aged hard cheeses.
