Château Roubine Premium Cru Classé Rosé comes from one of the original 23 estates named Cru Classé of Côtes de Provence back in 1955, grown on 72 vine-planted hectares between Lorgues and Draguignan on chalky, clay soil. The estate farms organically and biodynamically (Demeter-certified), and this cuvée is night-harvested, with hours of cold skin-contact maceration before pressing. Expect a pale salmon color, aromas of spring flowers and stone fruit, and a light-to-medium-bodied palate with fresh acidity. Pour it chilled alongside grilled fish, salade niçoise, or soft cheeses.
