Covenant Chardonnay Lavan is a 100% Chardonnay from Covenant Wines, made from grapes grown on the 10-acre Scopus Vineyard atop Sonoma Mountain in Sonoma County, California. "Lavan" is Hebrew for white, and the wine is whole-cluster pressed, barrel-fermented in French oak with native yeast, then aged roughly 16 months before bottling. Expect a richly textured, Burgundy-leaning style — think baked apple, honeysuckle, and toasted bread with a spine of balancing acidity. Pour it alongside roast chicken, seared scallops, or a soft triple-cream cheese.
