WINEMAKINGThe grapes were in the winery withinminutes of being picked, where theywere immediately crushed and sentfor fermentation in stainless steeltanks. The wine was fermented overten days during which time the juicewas mixed with the skins severaltimes a day, this allows maximumcolour extraction from the grapes.After pressing the wine wastransferred to new Israeli oakbarrels where it remained forapproximately one year. TASTING NOTESDalton Shiraz is dark almost black incolour, the nose is intense withblack fruit, plums, berries withsavoury and black pepper notes.The wine has soft integratedtannins and a long finish. Shiraz is avery concentrated wine with a longaging potential.
