WINEMAKINGRosé is a blush wine made fromshiraz, cabernet sauvignon andbarbera. The red grapes are broughtinto the winery at the end of thesummer and after crushing allowedto sit on their skins for three hoursbefore pressing, resulting in a lightpink juice. This pink juice was coldfermented for three weeks in orderto preserve as much of the characterof the wine as possible. Fermentationwas stopped early by freezing so thatsome residual sugar would remain. TASTING NOTESDalton Rosé is an incrediblyaromatic wine, with the essence ofbright strawberry, rose pedal andred grapefruit. The wine is slightlyoff dry and its bright acidityenhances the length of the wine'sfruit driven palate.
