In 1988, Eli Ben Zaken planted the first modern vineyard in Israel's Judean Hills, and by 1992 that plot yielded Castel's inaugural Grand Vin — now the estate's flagship. This Bordeaux-style blend of Cabernet Sauvignon, Merlot, Petit Verdot, and Cabernet Franc rests roughly sixteen months in French oak before a final stretch in concrete tanks, arriving deeply colored with blackberry and spice aromas, fine velvety tannins, and a long finish. Decant and pour alongside grilled lamb or an aged hard cheese. Certified kosher (OK, Badatz Beit Yosef, Haredim).
