From Domaine du Castel's hillside vineyards in the Judean Hills, Petit Castel is the estate's more approachable Bordeaux-style red — a handpicked blend of Cabernet Sauvignon, Merlot, and Petit Verdot. Twelve months in French oak, then a rest in concrete tanks, coax out elegant tannins and a harmonic balance of ripe fruit and oak spice. The pour goes deep purple in the glass, full-bodied and structured. Give it a few years in the cellar, decant before pouring, and let it run alongside grilled lamb or a rich beef stew.
