Don Vicente's Extra Añejo comes from Destilería El Pandillo in Jalisco's Highlands, where Felipe Camarena—a sixth-generation agave farmer—rests his blue Weber agave spirit at least three years in used American white oak bourbon barrels. Expect cooked agave up front, then oak, ripe fruit, caramel, and butterscotch settling in, courtesy of a slow oxygenation process that keeps everything balanced.
