Elvi Wines crafts its Viña Encina Rosado from 100% Syrah grapes grown in the Ribera del Júcar region of central Spain. The winery macerates the juice for just 2-3 hours to coax out its deep pink hue, then ferments it slowly at 12-14°C over 10-15 days to lock in aroma and color. The result is a bright, fresh rosé with ripe cherry, papaya, forest-berry, and dried rose-petal notes. Serve well-chilled alongside grilled seafood, charcuterie, or a summer salad.
