Bottled-in-Bond is a 19th-century federal seal of honesty: one distillery, one distilling season, aged at least four years, bottled at exactly 100 proof. Evan Williams' white-label version comes from Heaven Hill in Bardstown, Kentucky, and pours bright gold with caramel, vanilla, and oak on the nose. The palate turns to citrus and black pepper before a warm, dry finish. That extra proof holds up beautifully in an Old Fashioned, or poured over a single big cube.
