Grown in the iron-rich highland soil of Jalisco's golden triangle, this añejo comes from the Vivanco family's five generations of agave farming (NOM 1414). Sergio Cruz cooks the piñas low and slow in brick ovens before a champagne-yeast ferment and double copper-pot distillation, then rests it a minimum of a year in American oak. Expect toasted oak and cinnamon up front, butterscotch and dried fruit through the middle, and a long, oily finish with a whisper of pepper. Sip neat or over one ice cube.
