Odem Mountain's Har Odem Reserve Nebbiolo comes from Israel's highest and northernmost winery, perched at 1,060 meters in the Golan Heights on volcanic basalt soil. This dry red is made from Nebbiolo grapes grown in the Valley of Tears and hand-picked at dawn, then aged in French oak. Expect a garnet-hued glass with aromas of autumn leaf, rose, and forest floor, giving way to cherry and plum flavors framed by firm acidity and grippy tannin. Pour it alongside braised short ribs or aged hard cheese to soften that structure.
