Herzog Cabernet Sauvignon Valhall Vineyard is a single-vineyard California red from Herzog Wine Cellars, sourced from Valhall Vineyard's hillside terraces in Sonoma County's Alexander Valley, where rocky soil pushes the vines to work for concentration. Aged in oak, this 100% Cabernet Sauvignon shows dark cherry, licorice and black fruit layered over firm, structured tannins with a long finish. Pour it well before a ribeye or braised short ribs, letting it breathe 20-30 minutes to open up its darker, spicier notes.
