J de Villebois Sancerre Rosé comes from the Loire Valley, made entirely from Pinot Noir grown on Sancerre's Caillottes limestone and Terres Blanches marl slopes. A brief six-to-twelve-hour skin maceration gives the wine its pale, litchi-tinged pink hue before fermentation in stainless steel at cool, controlled temperatures. Expect red berry and citrus aromas, a tense, spicy finish, and flavors of cherry and strawberry laced with herbs and minerality. Pour it chilled alongside grilled vegetables, a Niçoise salad, or seafood skewers.
