Five generations of the Michel family have tended these Moussy vineyards since 1847, just outside Épernay, and Carte Blanche is their signature blend: 50% Meunier, 40% Chardonnay, 10% Pinot Noir, hand-harvested and fermented in temperature-controlled stainless steel to keep the fruit bright. Expect a straw-gold pour with a fine, persistent mousse, orchard fruit and a touch of fresh-cut hay on the nose, and a lively, fruit-forward finish. Chill it well and pour alongside oysters or a seafood spread for an easy, celebratory aperitif. Certified kosher and mevushal (Hatam Sofer, LBD).
