Laws Whiskey House grows its own story before it distills a drop: the heirloom rye behind this straight rye is grown at roughly 7,400 feet in Colorado's San Luis Valley, a semi-wild strain the Cody family has cultivated since the 1930s. Distilled and aged over four years in new charred oak in Denver, it opens with floral, perfumed aromatics and baking spice, then unfolds into black tea, salted toffee, and stewed fig, finishing on a bright green peppercorn snap. Pour it neat to let the high-altitude terroir show.
