M&M Cascina Minot Langhe Nebbiolo is a dry red wine from Piedmont, Italy, made from 100% Nebbiolo grown on a vineyard planted in the 1980s at 300-330 meters in Monforte d'Alba, where clay-and-blue-marl soil and eastern exposure shape the fruit. Fermentation runs 10-12 days on the skins before spontaneous malolactic conversion, then the wine ages 12 months in French oak barriques. Expect a violet-red glass, aromas of violet and chamomile, and a silky palate of ripe currant with a lingering vanilla note. Pour it alongside braised short ribs or aged Piedmontese cheeses.
