Madame de Rayne is the second wine of Château de Rayne Vigneau, a Premier Grand Cru Classé Sauternes estate in Bordeaux, France, bottled for the U.S. market in partnership with Maison Mercier. Grapes — mostly Sémillon with Sauvignon Blanc and a touch of Muscadelle — are left on the vine to develop noble rot, concentrating sugars before a careful, late harvest. The result is a golden, honeyed glass layered with candied orange, dried apricot, and blossom notes, balanced by real acidity. Pour it chilled alongside foie gras, blue cheese, or a fruit tart.
