Steve McCarthy started making single malt in Oregon over 25 years ago, using Scottish peated barley and Holstein pot stills — the bottle often credited with sparking America's craft single malt movement. This version rests six years in Oregon oak, then spends four months in Oloroso sherry casks from Spain, landing at cask strength (112 proof). Expect cherry sawdust and pine pitch on the nose, burned sugar, citrus, sea brine, and maple on the palate. Pour neat to catch the smoke fade into fruit.
