Padrecito Blanco starts with an unusual move: master distiller Erika Sangeado and bartender David Rios built this Jalisco tequila specifically to shine in a cocktail glass. The 100% blue Weber agave is harvested young, slow-steamed in a traditional masonry oven, then rests through a 72-hour fermentation before bottling at 40% ABV. Expect bright citrus and cooked agave up front, with white pepper and a whisper of pineapple underneath. Pour it over ice in a margarita, or sip it slow to catch the agave's quieter side.
