Psagot Cabernet Sauvignon comes from the Judean Hills of Israel, where the winery sources grapes from vineyards north of Jerusalem sitting roughly 900 meters above sea level on chalky mountain terraces. This dry red wine spends 13 months aging in French oak, building a full-bodied structure around layers of black cherry, blackcurrant, and red forest fruit, with vanilla, dried tobacco, and a touch of licorice from the barrel. Founded in 2003, Psagot has built a reputation for polished, age-worthy Judean Hills reds. Pour it alongside grilled lamb, aged cheeses, or a hearty beef stew.
