Psagot Edom is the flagship red blend from Psagot Winery in Israel's Judean Hills, grown on vineyards roughly 900 meters up in the mountains overlooking the Edom range's red granite ridgeline. The wine leans on Cabernet Sauvignon alongside Cabernet Franc, Merlot, and Petit Verdot, aged over a year in French oak. Expect dark fruit — blackcurrant and blackberry — layered with cedar, cocoa, and a mineral edge from the high-elevation limestone soil, backed by firm, structured tannins. Pour it alongside grilled lamb or a hard aged cheese to match its weight.
