Rabbit Hole's Cavehill uses four grains instead of the usual two or three: corn plus two malted barleys and malted wheat, since the distillery malts every secondary grain for extra depth. It's named for the Louisville cemetery holding more master distillers than anywhere else, aged 5-6 years in Kelvin Cooperage white oak, and blended in batches of no more than 15 barrels. Expect honey, apple, and spice up front, mint and orange mid-palate, vanilla and custard on the close. Pour it neat first.
