Tabor's flagship red is a single-vineyard Cabernet Sauvignon grown high in the Upper Galilee, on the slopes of Mount Malkia. Grapes are hand-picked at night and fermented on the skins for roughly two weeks before eighteen months of oak aging shape the wine into something structured and layered — dark ruby in the glass, with black forest fruit, cassis, clove, and a Mediterranean herbal edge. Pour it alongside a well-marbled steak or aged hard cheese and let it open up. Certified kosher and mevushal (OK, Badatz Beis Yosef, Rav Westheim, Kahal Chareidim).
