Tapatio Blanco comes from La Alteña, a family-run distillery tucked into the Los Altos highlands of Jalisco, where the Camarena family has been growing their own blue agave and distilling since 1937. Unlike most blancos, this one gets a short rest in stainless steel before bottling, rounding out the roasted agave into something layered — mint, anise, white pepper, a little cinnamon and clove, with citrus creeping in as it opens up. Pour it in a rocks glass or a simple margarita and let the highlands character do the talking.
