William Dalton is a straight bourbon whiskey with the mash billof 70% corn, 20% wheat, and 10% 2 row Caramel malt. Ouruse of Caramel malt brings a refined and sweetened note thattruly backs up the traditional tones of the wheat. Secondarilyis our use of our "house" yeast strain and a second brandyyeast that pulls forward herbal and fruity notes. We never sourmash our Bourbons in the traditional manner, but this bourbonrelies partially on malo-lactic fermentation to bring forth themore earthy elements as well as the creamy mouthfeel. 100%double pot distilled. Barrel entry at 105 proof. We mature in anumber 2 charred oak barrel (always 53 gallons) and in amixture of Chai cellar warehouse and Dunnage. No ChillFiltration so some cloudiness when chilled is to be expected
